
This recipe is super easy and delicious! You can make it all with fresh ingredients or semi-homemade. Either way, test both versions and see what your taste buds like. This salsa is my daughter’s favorite, and it disappears just as fast as I make it. And now, roasted red pepper salsa recipe!

Ingredients
2 lbs. tomatoes (fresh or canned)
2 fresh jalapeño peppers, seeded and chopped or pickled jalapeños. (If you use pickled jalapeños, you may need to use several depending on how hot they are. Start with one, blend, taste, and keep adding if necessary. I like to use La Costeña brand.)
2 fresh bell peppers or a jar of roasted red bell peppers. (I like to use Mezzetta brand)
1 white or red onion
2 tablespoons olive oil
A bunch of fresh cilantro
1/3 cup lime juice (2-3 limes)
1/2 to 2 teaspoons of kosher salt (start with 1/2, add as needed)

If Using All Fresh Ingredients
Preheat grill to 500 degrees.
-Take your onion (cut in half, outer layer removed), tomatoes, jalapeños, and bell peppers tossed in olive oil. Place on grill. Grill on one side for 5 minutes, then turn over and cook for another 5 minutes. You can also roast these at the same temperature and time.
-Remove the tomatoes, onion, and jalapeños and cook the bell peppers for an additional 3-5 minutes until peppers are charred and soft. Set aside and cool.
-Add the cilantro and garlic to the food processor and pulse.
-Take onion, bell peppers, and jalapeños and remove core, seeds, and ribs. Add these ingredients and the cilantro, garlic, lime juice, and salt. Pulse until desired consistency.
-Store in an airtight container until ready to serve. (I like to store my salsa in mason jars, it also makes a great gift)

If Using Semi-Homemade Ingredients
-Add the cilantro, jar of roasted red bell peppers (drained), garlic, pickled jalapeños (seeds, stems, and all), onions (core and outer peel removed), canned tomatoes (drained), lime juice, olive oil, and salt to the food processor.
-Pulse until desired consistency.
-Store in an airtight container until ready to serve.

This roasted red pepper salsa is easy to make. The smoky and sweet taste of this salsa has a great rich flavor. And both versions are great with chips, huevos rancheros, over potatoes, tacos, tostadas, or anything else you like salsa on. ¡Buen Provecho!
