
During the pandemic, so many people found they had to blow off some steam, and the way they went about it was by getting in shape and changing their eating habits. It gave so many people the chance to reset. In my case, I was in grad school and had just landed a job when we decided it would be best for me to stay home with our kids while my fiance worked. So I said goodbye to that job and put school on hold.
Now I wasn’t one of those people that decided to change for the good. I was one of those who decided that I would eat what I wanted when I wanted and not work out at all. So you can guess what happened next. A year later, I was 25 pounds overweight, and it was time to do something about it. I had just come off an exhausting and overwhelming 2021 year, and all I wanted was to sit and breathe. I finally decided to do something about my weight, and after trying to do things on my own, the weight stayed on, and my frustrations grew.
What I Eat
I don’t know about you, but when I feel lost, I pray. So I prayed for guidance on how to get on the path to well-being. Long story short, I came across this ad on youtube for V Shred. I took the quiz and decided to try it out. After the first six weeks, I lost 8 lbs. I was stoked and loved how the weight was coming off. I’m doing pretty good, and my goal is to lose the pesky 25 lbs that I’m tired of carrying. I’ve been pretty good about sticking to the workouts and meal plans. I’m learning which foods to eat and when and although I like to say that I haven’t cheated, my health is a work in progress, and I know I’m doing better than before. I’m allergic to some fish and chicken, so the meals I eat are modified. So today, I feel like sharing some of the things I’ve been eating daily to lose weight. I can change these meals up with different proteins, fruits, and veggies. These meals and snacks are simple, clean, and, most importantly, working for me. This is what I eat in a day!
Breakfast

liquid egg whites, quaker oats, blueberries
Snack#1

cucumber, almonds, hummus
Lunch

shrimp, spring mixed greens, cherry tomatoes, bell pepper, light balsamic vinaigrette with extra virgin olive oil.
Snack#2

Dinner

broccoli, chickpeas (garbanzo beans), lean pork tenderloin
Snack #3

Like I said, simple, clean ingredients that keep me full, slim and trim. I love these meal plans because they’re tailored to me. I love that the meals are easy, have simple ingredients, and taste good. Easy recipes that have helped me lose weight and keep it off.
